One Pot Ground Beef Stroganoff

1 lb ground beef (or lamb)
1 tbsp oil (I used @primalkitchenfoods)
3 tbsp butter, divided
8 oz mushrooms, finely diced or sliced
2–3 large shallots (or 1 medium yellow onion), finely diced
1 tsp smoked paprika (optional)
Kosher salt + freshly cracked black pepper, to taste
6 cloves garlic, minced
1 tbsp fresh thyme, finely chopped
2 tbsp flour
½ cup dry white wine
4 ½ cups beef broth (I used @kettleandfire)
1 lb small pasta (shells, elbows, shellbows, etc.)
½–1 cup sour cream, room temp
½ cup heavy cream, room temp
1 tbsp Dijon mustard
1–2 tsp Worcestershire, to taste
1 cup Parmesan or Pecorino Romano (optional, for mixing in or topping)
1 cup frozen peas (optional)
Fresh chives + Parmesan, for serving
Instruções
cook ground beef and remove
suatee shallots, add in mushrooms, garlic and thyme
add in butter and flour
deglaze with white wine
pour in beef broth and bring to simmer
add in uncooked noodles and simmer for 12-15 minutes
add in cream, paprika and sour cream
add worchestire and dijon
add ground beef back as well as parmesan and peas
