Ingredients (makes 8 burritos):
16oz 96/4 Lean Ground Beef
1 Packet Taco Seasoning
56g 2% Mexican Cheese
2 Light Laughing Cow Cheese Wedges
6g Nutritional Yeast
120g Reduced Sodium Chicken Broth
8 Light Mozzarella Sticks
8 Low Carb Tortillas
Low Cal Creamy Taco Bell Sauce (makes 12.5 servings):
170g Plain Non Fat Greek Yogurt
113g 2% Cottage Cheese
113g Taco Bell Fire Sauce (most grocery stores have this)
8g Taco Seasoning
added 0.5g Fat to each for the cooking spray
Instruções
Make your low cal creamy taco bell sauce by adding all your ingredients into your small blender and blending till smooth. Add to fridge to cool and thicken up.
Freeze your mozzarella stick. Make sure to take out the wrappers before adding to the freezer.
Add all your taco bell sauce ingredients into your small blender and blend till smooth. Add to the fridge.
Brown both sides of your 96/4 Lean Ground Beef in a pan on a 7/10 heat. Then add your taco seasoning and mix. Add 90g of chicken broth to keep it nice and juicy.
Then lower the heat of the pan and add your Mexican cheese, cheese wedges and nutritional yeast. Mix all together. Then add 30g more chicken broth.
Take your now frozen mozzarella sticks and cut them in half long ways.
Now it’s time to build the burritos. Lay down once burrito. Then add 1/8th of your filling to the middle. Then see the video for how I placed the mozzarella sticks.
Fold your burrito shut and then repeat for all 8.
Add to air fryer and spray with non stick cooking spray. Air Fry on 400 Degrees F for 4 minutes. Then enjoy!
