Dairy & Gluten Free Pistachio Coconut Macaroons

1 3/4 cups shredded coconut
3 tbsp pistachio butter
4 tbsp maple syrup
4 tbsp olive oil
1 tsp vanilla extract & pinch of salt (optional)
1–3 tbsp dairy-free milk (add slowly until the dough squeezes + sticks)

Mix everything together adding milk slowly. Let it sit for 10 min to soak up. Scoop + shape on parchment and bake at 350°F for 12–13 min until edges are golden.
Cool completely, dip bottoms in melted dark chocolate, if you wish, drizzle the rest on top, chill 10–15 min and enjoy 💚✨
