Crispy Baked Tacos with Buffalo Ranch

Ingredientes

1 pound ground beef, turkey or chicken

2 tablespoons Harmony Southwest or taco seasoning

Optional: 1/3 cup water, 1 teaspoon tapioca flour or cornstarch

1 lb taco meat

8 corn tortillas

2 cups shredded cheese, I use sharp white cheddar

Limes for squeezing

1/2 cup Greek yogurt or sour cream

1/3 cup mayo

1/3 cup buffalo sauce

1 teaspoon kosher salt

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon dried dill

1/2 teaspoon dried parsley

1/4 teaspoon pepper

Instruções

First, make the ranch by whisking together all ingredients. Refrigerate while making the rest.

Preheat the oven to 425.

Heat a skillet over medium heat. Once it’s hot, add in your ground beef. Break it up with a wooden spoon as it browns.

Once the meat is almost fully browned, add in seasonings. If you like more “saucy” beef, add in the slurry of flour + water and let it simmer on medium heat until the liquid dissolved (6-8 minutes).

Lay the tortillas out on a baking sheet and coat both sides with avocado oil. Add the taco meat to one half of the tortillas and top with cheese. Bake for 5 min then remove from the oven and fold the tortillas to make a taco. Bake for an additional 7-10 minutes or until crispy.

Add your desired toppings and serve!
