Harissa Tofu Bowl

1 tbsp Turmeric
1 tbsp Cumin
2-3 tbsp Olive oil
1 cup washed White rice
1 block Firm tofu cubed
1 -2 tbsp Tomato paste
1 tbsp Harissa
2 cloves grated Garlic
1/2 lemon Lemon juice
1 tbsp Cumin
1-2 tbsp Olive oil
1 tbsp Oregano
1/2 Red onion sliced
1 Red Fresno chili pepper sliced
Baby Cucumbers halved, cored, sliced
2 tbsp Salt
1 tbsp White vinegar
Tzatziki sauce
Instruções
1. Bloom turmeric and cumin in oil. Add white rice and toast. Once toasted add to rice cooker and cook.
2. Lightly boil cubed tofu in salted water.
3. Mix together all sauce seasonings into a paste. Add tofu and toss until fully covered
4. Bake tofu in oven until crispy. Around 400F for 25-35 min
5. Pickle cucumbers, peppers, red onion. Mix and set aside.
6. Add all components to a bowl and enjoy
