Dairy Free Creamy Pistachio Ice Cream

Recipe:

1 cup pistachios + more for topping

1 cup coconut milk (make sure it’s canned not regular coconut milk)

1 cup coconut cream, solid part only

1 tsp vanilla

1/4 cup maple syrup

Instruções

add pistachios to food processor and pulse until smooth and creamy (about 2-3minutes)

add all remaining to food processor and blend until smooth and creamy

pour mixture into dish and top with extra pistachios, freeze for at least 4 hours or overnight

when ready to eat let thaw for a few minutes
