Ingredients:
1/3 cup melted butter
1 cup sugar
3 tablespoons of lemon juice
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
2 tablespoons of grated lemon peel
1/2 cup chopped walnuts (optional)
1 cup of fresh or frozen blueberries
Glaze:
2 tablespoons of lemon juice
1 tablespoon melted butter
1 cup confectioner’s sugar
Instruções
Directions:
In a mixing bowl, blend the melted butter with a cup of sugar, lemon juice, and eggs.
Mix the flour, baking powder, and salt. Stir in the egg mixture, alternating with the milk.
Add lemon peel, nuts, and berries.
Pour the mixture into a greased loaf pan.
Bake at 350°F for about 61 to 71 minutes.
