A tasty Italian tart (or is it a flatbread?) that is full of flavour and veggies, covered in plenty of olive oil this is a proper easy baking treat! 😊

3 large courgettes
1 large red onion
1 cup plain white flour
big pinch salt n pepper
1 tsp garlic/onion
1/2 tsp basil/oregano
1 to 2 tbsp nutritional yeast
few tbsp olive oil
method👇🏾
thinly slice the courgette and onion then salt and leave to sit for up to 2hrs.
squeeze out the salted liquid from the softened veggies, then mix the liquid with the flour and seasonings before adding the veggies. You want a wet batter so add more liquid/less dry if necessary.
place on a oil greased tray, oil on top then bake for 45mins @ 200°, allow to cool slightly then serve and enjoy.
