Use finely diced onions, diced tomatoes, squash cut into even shapes, garlic, white wine, olive oil, slices of mozzarella, ciabatta slices, thyme

To caramelize onions, get pan hot with olive oil, put onions in pan; cook on high heat; scraped out burned bits because they will be bitter; don’t forget to salt onions after you add them to pan

Take out caramelized onions, add new onions and add salt; add zucchini and add salt; don’t crowd zucchini in pan; add garlic; cook until squash browns

Take out veggies and add wine and tomatoes and thyme and salt and pepper; take out tomatoes

Toast ciabatta at 400 for 4 mins with olive oil

Assemble crostini: toast slice, mozzarella slice, squash and onions, bake for a few mins
