WHOLE GREEN LENTILS WITH GARLIC & ONION

4 tablespoons vegetable oil

½ teaspoon cumin seeds

4 garlic cloves, peeled and finely chopped

1/2 cup onion, peeled and chopped

3/4 cup (200g/7 oz) whole green lentils, picked over, washed and drained

3 cups water

1 teaspoon salt

1/8-1/4 teaspoon cayenne pepper

1. Heat the oil in a heavy pot over a medium flame. When hot, put in the cumin seeds. A few seconds later, put in the garlic. Stir and fry until the garlic pieces turn golden. Now put in the onion. Stir and fry until the onion pieces begin to turn brown at the edges.

2. Put in the lentils and the measured water. Bring to the boil. Cover, reduce the heat to low and simmer for about 1 hour or until the lentils are tender. Add the salt and cayenne.

3. Stir to mix and simmer gently for another 5 minutes.

Notatki

This is a very simple - and flavourful - method of cooking the humble lentil. You could serve them with Goan-style pork vindaloo or any other meat dish, Simple buttery rice with onion and Gujarati- style green beans (see pages 76, 196 and 132).
