Baked Salmon

1 tbsp olive oil

4 salmon fillets

3 to 4 scallions, trimmed and halved lengthwise

1 clove garlic, coarsely sliced

2 tbsp white wine

Kosher salt and freshly ground black pepper

Wskazówki

1. Preheat the oven to 350F.

2. Rub the oil over the fish and across the bottom of a roasting pan. Place the fish in the pan, skin-side down, and add the scallions, garlic, and wine. Season with salt and pepper. Cover the pan with aluminum foil and bake for 10 minutes. Uncover the pan and bake for 2 minutes or so more. The fish should be nicely medium rare.
