Easy Cheesy Frittata

200g tenderstem broccoli

2tbsp olive oil

1 red pepper, sliced into strips

6 large eggs, lightly beaten

120g goats' cheese, sliced

1tbsp grated Parmesan

25g pine nuts

Wskazówki

1 Heat oven to 200C fan, gas 7. Blanch the broccoli in boiling, salted water for 2 minutes and drain well.

2 Heat the oil in a heavy-based frying pan and fry the red pepper for 5 minutes until it's nearly tender.

3 Pour over the eggs, add the goats' cheese and Parmesan, and season well. Cook for a few minutes on the hob to firm up the base, then sprinkle over the pine nuts.

4 Put the pan in the oven for 8-10 minutes until the frittata is puffed, golden and completely set. Cut into wedges to serve.

This is great served warm or cold — add ham or chorizo sausage if you want it meaty.
