Creamy Garlic Chicken & Mushroom Spaghetti | Weeknight Favor

300g spaghetti
2 skinless chicken breasts, sliced into strips
200g button mushrooms, thinly sliced
2 cloves garlic, finely minced
2 tbsp unsalted butter
1 tbsp olive oil
Salt & freshly ground black pepper
1 tsp Italian herb mix (dried)
200ml heavy cream
50g Parmesan cheese, shredded
1 tsp cornstarch + 1 tbsp water (optional, to thicken sauce)

Cook the spaghetti in a pot of salted boiling water for 8–10 minutes. Drain and set aside.
Sear the chicken: Heat oil and 1 tbsp butter in a skillet over medium heat. Add the chicken strips, season, and cook for 5–7 minutes until golden and cooked through. Transfer to a plate.
Sauté mushrooms & garlic: Melt remaining butter in the same pan. Add garlic and mushrooms; cook for 4–5 minutes until soft and fragrant.
Simmer the sauce: Return chicken to the pan. Pour in cream, add Italian herbs and Parmesan. Let it simmer for 5–7 minutes until creamy. Stir in the cornstarch slurry if you want a thicker consistency.
Serve it up: Adjust salt and pepper. Place spaghetti on plates, spoon the creamy chicken mushroom mixture on top, and serve hot.
Optional Add-ins & Swaps:
Add chopped sun-dried tomatoes or spinach for more color and nutrients.
Use rotisserie chicken to speed things up.
