No Knead Hot Cross Buns

600 gms strong white flour
1 tsp baking powder
100 gms caster sugar
2 tsp each cinnamon and all spice
pinch of salt
10 gms fast acting yeast
200 gms mixed fruit
zest of one orange
60 gms butter
350 mls milk
1 egg beaten
1 tsp vanilla extract
For the topping
60 gms flour
5 tbsp water - add slowly until proper consistency is reached
apricot jam to decorate

Add all the dry ingredients to a large bowl, add the zest of an orange, and set aside.
Mix butter and milk and microwave for 90 seconds so the butter melts into the milk. Add the beaten egg and vanilla extract to this then add all the wet into the dry mix.
Bring this together with a fork until fully mixed. Leave in the large bowl and cover with a towel. Set close to heat to allow the yeast do its work. An hour should see the dough almost double in size.
Remove the dough from the bowl and divide in 12. Shape the buns as shown on the video - sort of tucking the dough under to make a smooth shape. Place into a 9x13inch baking tray lined with parchment.
Allow to rise again for 40 minutes. Preheat the oven to 180°C fan.
Make the flour mix for the crosses. Add to a piping bag and pipe it onto the buns. Bake for 20-25 minutes - they should be golden brown in colour.
Finally heat the apricot jam and apply with a brush.
