Salad With Pears and Goat Cheese with Dried Cherry Vinaigret

Salad:

1 large pear

1-½ tsps. olive oil

1/2 Tbsp. unsalted butter

⅓ cup pine nuts

8 ozs. salad greens

¼ cup goat cheese, crumbled

Vinaigrette:

3 Tbsps. red wine vinegar

1/4 cup olive oil

salt and pepper •

1/4 cup dried cherries, coarsely chopped

Cut the pear into & wedges, removing the core. Heat the oil in a skillet over medium heat. Add the pear wedges, cut side down, and sauté for approximately 3-4 minutes, or until flesh is just starting to turn golden brown. Gently flip pear wedges over and sauté other side for another 3-4 minutes, until the other side is similarly golden. Remove pears from skillet and drain. Add pine nuts to still warm. skillet and cook over medium-low heat, stirring frequently, a fil they are golden. Remove from heai.

For the Vinaigrette: Whisk together the vinegar and olive oil in a small bowl. Salt and pepper to taste. Stir in dried cherries.

Put greens on a platter or on individual plates. Arrange pears around the outside of the greens. Sprinkle the salad with the crumbled goat cheese and pine nuts. Drizzle salad with vinaigrette just before serving. Serves 4-6.
