Creamy Rose Pasta

2 tbsp olive oil
1 yellow onion
6 garlic cloves
1 tsp red pepper flakes
1 ½ cup passata
1/3 cup water
1 tsp salt
1 tsp black pepper
1 tsp sugar
1 ½ cup heavy cream
1 box spinach
1/4 cup pasta water
1 box pasta
1/2 cup pecorino romano
fresh basil

Prepare ingredients by dicing onions, mincing garlic, and grating Pecorino Romano.
In a large skillet, heat olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes, until they’re soft and lightly golden. Add in the minced garlic and red pepper flakes, cooking for 30-60 seconds until fragrant.
Pour in passata and water, then season with salt, pepper, and sugar. Stir well, cover and simmer on medium/medium-low heat for 15-20 minutes,
While the sauce simmers, cook your pasta in a pot of boiling salted water according to the package instructions. Don’t forget to reserve about 1/4 cup of pasta water before draining.
Once the sauce is ready, stir in the heavy cream and simmer uncovered on medium heat for about 5 minutes to let it thicken slightly.
Add in spinach and reserved pasta water to the skillet. Stir gently then cover with a lid and cook for 3-5 minutes on medium heat, until the spinach wilts.
Add the cooked pasta along with the grated Pecorino Romano to the sauce. Toss everything together until the pasta is evenly coated with the creamy rose sauce and simmer together for 1 minute.
Garnish with fresh basil, a crack of black pepper and additional pecorino Romano.
