Minty Lamb Patties & Herby Couscous Bowls

Patties

1 courgette, grated

1/2 bunch mint, roughly chopped

600g lamb mince

1 Tbsp chimichurri blend

3 Tbsp wholemeal breadcrumbs

1/2 tsp salt

1 drizzle of oil

Herby Couscous

200g pearl couscous

1 broccoli, cut into small florets

1 can corn (300g), drained

1 pack garlic & coriander oil

To Serve

4 Tbsp garlic aioli

1/2 bunch mint

Before you start

Bring a pot of salted water to the boil.

Make patties

Grate courgette and roughly chop first measure of mint. Combine in a bowl with remaining patty ingredients (except oil). Using a 1/4 cup measure, divide and shape mixture into patties, about 1cm-thick. Set aside on a plate/tray.

Cook couscous

Cook couscous in pot of boiling water for 8-11 minutes. Meanwhile, cut broccoli into small florets and drain corn. Add broccoli to pot with couscous for final 4 minutes cook time, until just tender. Drain well and return to pot with corn and garlic & coriander oil. Season to taste with salt and pepper.

Cook patties

Heat oil in a frypan on medium heat. Cook patties, in batches if needed, for 4-5 minutes each side, until golden brown and cooked through.

Serve

Top couscous salad with patties. Dollop over garlic aioli and garnish with remaining mint leaves.
