Thai beef salad

Składniki

2 x 200g sirloin steaks

finely grated zest and juice of 3 limes

2tbsp soy sauce

2cm piece of fresh ginger, grated

1tbsp light muscovado sugar

1 red or green chilli, sliced a small bunch of fresh coriander, the stalks finely chopped

for the salad:

½ cucumber, sliced

100g cherry tomatoes, quartered

fresh mint and basil leaves, chopped

1 small red onion, sliced

100g mangetout and sugar snap peas, sliced

100g radishes, sliced

Wskazówki

1 Season the steaks with black pepper, the zest and juice of 1 lime, and the soy sauce. Mix the together the remaining zest and juice, ginger, sugar, chilli and coriander stalks, and set aside.

2 Heat a griddle pan until hot. Add the steaks and cook for 3-4mins on each side for medium, or a little longer for well done. Remove from the pan and set aside to rest.

3 Combine the salad ingredients and arrange on a serving dish. Slice the steaks, place on top of the salad and drizzle over the lime and ginger dressing.
