Hot Chocolate Cookies (gf / Df)

10 oz dark chocolate 70% cacao, cut into ½ inch pieces and divided

¼ cup plus 1 tbsp coconut oil

2 cups confectioners sugar

2 large eggs, at room temperature

⅓ cup cacao powder

¼ tsp salt

Wskazówki

Preheat oven to 350°F.

Melt 5 oz dark chocolate and coconut oil together on pot of boiling water then set aside to cool until just warm but not hot.

Add eggs to a large bowl with sugar and beat on high for 6 minutes until you get to ribbons phase.

Stir melted chocolate into whipped eggs and sugar then sift cocoa powder and salt into batter and mix until just combined.

Fold in remaining chocolate chunks then scoop 2-3 tbsp batter onto a parchment lined baking sheet. Bake for 12-14 minutes until the tops have cracked and centers are still soft.

Allow cookies to cool and set before serving.
