Cottage Cheese Apple Cinnamon Pancakes

2 large eggs

½ cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

½ teaspoon ground cinnamon

1 small apple, grated

In a bowl, whisk cottage cheese, eggs, flour, sugar, baking powder, and cinnamon until smooth.

Fold in grated apple.

Heat a nonstick skillet over medium, add a pat of butter.

Pour ¼-cup batter portions into skillet; cook 2–3 minutes until edges set.

Flip and cook another 1–2 minutes.

notes: Drizzle with maple syrup or honey for extra sweetness.
