Seal dough well to avoid absorption
Measure out dough into 2 balls weighing exactly the same
Flatten onto plastic wrap as I would if I was rolling it and wrap
Put on a sheet pan so it doesn’t get squashed in the fridge
Prick top of dough with fork when making pie or upside down tart
Roll out thin - 1/2” to 1/4”
Don’t handle the dough too much
Use lots and lots of flour
Upside down plum tarte tatin
Cut fruit into quarters rather than halves
Dough should be flaky
If there is juice in the skillet, pour it off and reduce it
For scones, sift flour, baking powder, salt, then put into a Cuisinart with cut cold butter and pulse it in; then take it out to mix fruit, eggs, cream in, etc
For English muffins, cut them 1/2” thick, dust and rub with cornmeal, flatten with knuckles, cook in skillet with clarified butter
