4 eggs - mine weighed 230 gms

230 gms self raising flour

230 gms icing sugar

230 gms very soft butter - should smush flat when you pat it down with a spatula! Melt it either if you want to use a wooden spoon

1 tbsp vanilla extract

4 tbsp milk/ or 7-up/ or water/ or cream

I use the @ifyoucare_usa muffin cases - they NEVER stick! Otherwise you’ll need a spray, or use silicon cases - you might get 24 of the smaller sized buns.

Preheat oven to 160°C fan.

Place all the ingredients into a large bowl and use an electric beater to blend the mixture fully. That’s it!

Use the @homestoreandmore.ie brabantia spatula to make sure mix is fully blended. Use their medium ice cream scoop to fill the bun cases - I used 2/3 of a scoop for each.

Bake until risen and golden - can take 14-20 minutes depending on size and oven temp. Leave to cool - if you can - on a wire tray.
