Biscoff Cookie Bars

2x eggs (room temperature)

240g salted butter

140g light brown sugar

70g caster sugar

2 tsp vanilla extract

330g plain flour

1 tsp baking soda

biscoff spread (approx. 1 jar)

white chocolate chips (measure with ❤️)

biscoff biscuits (broken into smaller pieces)

Line your baking pan (I used an 8x8) with baking paper. Melt your biscoff and pour it into the pan. Freeze for an hour or until solid.

Add your butter to a saucepan and melt over low/medium heat, stirring consistently. The butter will start to foam, keep stirring until the butter turns a golden brown/amber colour. Once you achieve this colour carefully transfer the butter into a heat safe dish and let cool for 10-15 minutes.

Preheat oven to 170C.

In a bowl, whisk brown butter, brown sugar and caster sugar until combined.

Add eggs and vanilla extract and whisk until combined.

Add flour and baking soda. Fold until combined.

Fold in white chocolate chips and broken up biscoff biscuits.

Use the baking paper to remove the biscoff from the baking pan and place back into the freezer.

Spread half of the cookie dough into the lined pan and smooth out.

Place the biscoff layer on top and cover with the remaining cookie dough.

Top with white chocolate chips and biscoff biscuits.

Bake for 170C for 35-40 minutes (time will depend on how gooey you like your cookie bars)

Slice once cooled.
