Grilled Baby a Leeks With Parsley & Chives

16 baby leeks 2 tbsp sherry vinegar 1 tsp Dijon mustard Salt and black pepper 1½ tbsp fresh chives, chopped

1 tbsp flat-leaf parsley, chopped, plus extra for sprinkling

125ml olive oil

Wskazówki

1 Trim the root ends from the leeks, eaving just enough attached to keep

them from falling apart.

2 In a baking dish, combine the vinegar, mustard, a pinch each of salt and pepper, one tablespoon of the chives and the chopped parsley. Whisk together until well blended. Add the oil in a slow, steady stream, whisking constantly.

3 Place the leeks in the dish and toss to coat. Cover and marinate at room

temperature for one hour, or in the refrigerator overnight.

4 Prepare a barbecue over mediumhigh heat and oil the grill rack. Remove the leeks from the marinade, shaking off any excess, and reserve the marinade. Arrange the leeks on the rack and cook for 5-6 minutes, turning occasionally until tender.

5 Transfer to a platter and drizzle with the reserved marlnade. Sprinkle with the remaining chives and the parsley.
