Beef Stir Fry With Almond Butter Sauce

INGREDIENTS
500g lean beef stir fry
2 bunches (500g) Asian greens (e.g. Bok Choy,
Chinese Broccoli etc.)
2 cloves (8g) garlic, finely diced
1 tsp (5g) ginger, minced
1 ½ tbls (30g) miso paste
3 tbls (60g) almond butter
1 tsp (5ml) honey
2 tsp (10g) coconut oil

METHOD
1. Whisk miso, almond butter, maple syrup and 3 tbsp hot water. Set aside.
2 Wash and chop Asian greens. Finely dice garlic.
3. Heat half the oil on high in a wok or non-stick fry pan.
4.Add garlic, ginger and Asian greens. Stir fry for 4-5 minutes or until tender. Set aside.
5. Heat the remaining oil. Cook beef in batches for 5-6 minutes until just cooked.
6.Add Asian greens back into the pan with the beef. Drizzle sauce over the top, reservin tablespoon.
7. Divide stir fry into 4 bowls, served with rice, and drizzle remaining sauce over.
