Mince and Vegetables Rice

1 finely chopped onion
500g 2% turkey mince
1 carrot, 1 courgette, 5 mushrooms (or whatever veg you have!)

Spray oil
1 tbsp tomato purée
1 stock cube dissolved in 1.5 cups hot water
Paprika, cumin, salt & pepper to taste
How to make it:
Spray a pan with oil and fry your onion until golden.
Dice your veggies and throw them in. Cook until soft, then set aside.
In the same pan, add a little more spray oil and cook the turkey mince until it’s no longer pink.
Add your veggies back in. Season with paprika, cumin, salt & pepper.
Stir in the tomato purée and your stock. Mix everything together.
Bring to a boil, then simmer for 10–15 minutes.
Serve with rice, pasta, or enjoy it on its own! It also meal preps incredibly well so perfect for office days! ✅
