Sweet and Sour Tofu Vegan Stir Fry

Tofu
400g extra firm tofu, cubed
2 tbsp cornflour
2 tbsp neutral oil
Sweet and sour sauce
3 tbsp tomato ketchup
2 tbsp rice vinegar
2 tbsp soy sauce
1 tbsp maple syrup
1 tsp chilli flakes
2 garlic cloves, minced
1 tsp fresh ginger, grated
100ml water
1 tsp cornflour mixed with 1 tbsp water
Stir fry
1 red pepper, sliced
1 green pepper, sliced
1 bunch asparagus, chopped
3 spring onions, sliced
100g glass or rice noodles, cooked

Toss tofu cubes in cornflour. Heat oil in a wok over medium-high heat and fry tofu until golden and crisp on all sides. Set aside.
In the same wok, stir fry red pepper, green pepper, and asparagus for 4 to 5 minutes until just tender.
Whisk together ketchup, rice vinegar, soy sauce, maple syrup, chilli flakes, garlic, ginger, and water. Pour into the wok.
Add cornflour slurry and stir until the sauce thickens slightly, about 2 minutes.
Return tofu to the wok along with cooked noodles. Toss to coat everything in the sauce.
Scatter over spring onions and serve immediately.
