Brothy Cajun Jambalaya

1 lb andouille sausage, sliced

½ lb peeled and deveined shrimp, tails removed

1 lb chicken breast or thighs, cubed

4 tbsp cajun seasoning, divided

2 tbsp olive oil

2 cups chicken bone broth

½ lemon, juiced

Fresh parsley, finely chopped for garnish

Green onion, finely chopped for garnish

Chives, finely chopped for garnish

Rice:

2 cups uncooked white rice, rinsed

½ yellow onion, diced

1 red bell pepper, diced

2 stalks celery, thinly sliced

4 cloves garlic, minced

2 tsp cajun seasoning

½ tsp salt

½ cup tomato sauce

3 cups chicken bone broth

2 tbsp olive oil

To make rice, add 2 tbsp olive oil to a large pot over medium heat. Add bell pepper, celery and onion and sweat down until onions are translucent, about 5 minutes.

Stir in garlic, Cajun seasoning and salt then add in rice. Mix well and toast rice for two minutes before adding in tomato sauce and bone broth.

Cover and bring to a simmer, then reduce heat to lowest temperature and continue cooking 15 minutes longer. Turn off the heat and allow rice to steam covered for at least 5 minutes before fluffing with a fork.

Season chicken with 3 tbsp Cajun seasoning and toss well until evenly coated. Season shrimp with 1 tbsp Cajun seasoning and toss well until evenly coated.

Heat 2 tbsp olive oil over medium high heat. Add chicken and sausage and sauté until chicken is browned and cooked through, about 5 minutes. Add in shrimp and sauté two minutes longer until pink and cooked through.

Remove meat from your pan and set aside. Deglaze with bone broth, scraping the pan to release anything that has stuck. Stir in lemon juice then turn off the heat.

Plate rice in serving dish, pour broth over top then add several scoops of protein. Garnish with fresh parsley, sliced green onions and chives.
