Cheesy Baked Shrimp Tortellini Alfredo

1 package cheese tortellini (20 oz, refrigerated or frozen)

1 lb shrimp, peeled, deveined, tail-off

Salt & black pepper

1/2 tsp Italian seasoning

1/4 tsp crushed red pepper (optional)

2 tbsp olive oil

Creamy Alfredo Sauce

2 tbsp unsalted butter

3 garlic cloves, minced

2 cups heavy cream

1/2 cup grated Parmesan

Salt & black pepper

To Bake & Finish

1 cup shredded mozzarella

2 tbsp fresh parsley, chopped

How to Make It

1️⃣ Boil the tortellini

Cook the tortellini until al dente according to the package. Drain and set aside.

This gives you the perfect soft, cheesy pasta base.

Sear the shrimp

Heat olive oil in a skillet over medium-high heat.

Season the shrimp with salt, pepper, Italian seasoning, and optional red pepper flakes.

Cook 1–2 minutes per side until light pink and juicy.

Remove and set aside.

Make the Alfredo sauce

In the same skillet, melt the butter.

Add the garlic and cook 30 seconds until fragrant.

Pour in the heavy cream, Parmesan, and a pinch of salt + pepper.

Simmer 3–5 minutes until thick, creamy, and smooth.

Assemble the bake

Preheat oven to 375°F.

In a greased baking dish, combine the tortellini + Alfredo sauce. Mix gently to coat.

Add the shrimp on top and sprinkle with mozzarella.

Bake 15–20 minutes until bubbly and lightly golden.

Serve hot

Finish with chopped parsley and serve warm.
