Recipe: High-protein Gf Mini Cheesecake

Składniki

3/4 cup cottage cheese

1/4 cup Greek yogurt (I used vanilla because that’s what I had, and it actually works really well, but natural yogurt will work too)

1 egg

1 tsp maple syrup (you could add more, but I find this is enough once you top it with strawberries)

Zest of 1 lemon

1 tbsp corn starch (this helps keep it drier and set nicely—forgot to mention this ingredient in the video!)

Optional Toppings:

Fresh or frozen and warmed berries (like strawberries, blueberries, or raspberries)

Passion fruit, mango

Any other fruit of your choice

Wskazówki

Line your 4-inch springform pan with baking paper.

Blend all ingredients in a food processor until smooth.

Pour the mixture into the prepared pan.

Bake at 180°C (350°F) for about 30 minutes or until set.

Let it cool, then top with berries or any fruit of your choice.
