Wonton Lasagna

1 lb ground chicken
1/2 red onion, grated or finely chopped
3/4 cup grated carrot
4 green onions, sliced thin
1 tablespoon fresh ginger, minced
3 cloves garlic, minced
½ teaspoon baking soda (makes for a fluffier texture)
2 tablespoon Sesame Oil
1/2 teaspoon black pepper
2 tablespoon rice wine vinegar
2 tablespoon Oyster Sauce
¼ cup low sodium soy sauce
1 cup water chestnuts, finely chopped
1 package wonton or dumpling wrappers
Sliced green onions for garnish

In a large bowl, combine the ground chicken, grated carrots, green onions, ginger, garlic, baking soda if using, sesame oil, rice wine vinegar, oyster sauce, and soy sauce. Mix until evenly combined.
Prepare your casserole dish.Add a spoonful of the pork mixture to the bottom, then dip each wonton wrapper in water and layer on top of the meat mixture, overlapping the sides. Continue layering the filling and wonton wrappers, gently pressing each layer down, until the ramekin is almost full.
Steam on high for about 25-30 minutes. Remove from heat, drizzle generously with chili garlic crips, garnish with green onions and Devour!
