Corn and Summer Squash Fritters

This batch yields 8 large fritters or 14 bite-sized.
What you’ll need:
1 ear of corn
1 zucchini
1 goldbar squash
2 spring onions, or one small yellow onion
1/2 cup AP flour
1/4 tsp baking powder
1 cup sparkling water, may not need it all
1/2 cup oil for frying
Notes: in total you need a heaping cup and a half of vegetables but measure AFTER you salt the zucchini mixture because it will wilt down a lot.

1•grate the zucchini, yellow squash and onion on a box grater. Set into a colander set over a bowl. Sprinkle 1 tsp of salt over and mix to coat. Set aside for 10 minutes
2•Cut the corn kernels from the cob
3•In a large bowl mix the flour, baking powder and a pinch of salt.
4•When 10 minutes are up squeeze out as much water from the zucchini mixture as you can.
5•Whisk 1/2 cup of sparkling water into the flour mixture. Add more water until it resembles a pancake batter.
6•stir in all the vegetables. See my video for desired consistency. If yours seems too thick add a bit more water. I usually need 3/4-1 cup. If yours seems too thin stir in a pinch more flour.
7•heat you pan over high then reduce the heat to medium and heat the oil. Drop your fritters in and cook until deep golden (3-4 minutes) before flipping. When both sides are brown and crispy remove onto a paper towel lined plate. Enjoy while hot!
