Egg Phyllo Pastry - Cheesy

2 sheets filo pastry

30 g (1 oz) cheese, preferably reduced-fat mozzarella or cheddar

1 large egg

1 tbsp (15 ml / 0.5 fl oz) olive oil

Wskazówki

Prepare the Pastry: Preheat your oven to 180°C (350°F). Place one sheet of filo pastry on a baking tray, drizzle lightly with olive oil, then top with the second sheet. Repeat the oil drizzle to keep the layers moist and crisp during baking.

Create the Nest: Sprinkle cheese into the centre of the filo pastry. Using your hands, gently push the edges inward to form a nest-like shape, leaving space in the middle for the egg.

Bake the Base: Brush olive oil over the exposed sides of the pastry. Bake in the oven for 6 minutes until lightly golden.

Add the Egg: Remove from the oven and carefully crack the egg into the centre of the cheesy nest. Return to the oven and bake for a further 10 minutes until the egg is cooked to your liking.
