Lentil Soup

Here is what you need:
2 tbs olive oil
1 bag (16 oz.) red lentils, rinsed and drained
1 onion, diced
3 garlic cloves, chopped
3 celery stalks, diced
1 medium sweet potato, diced
1/2 bunch of each cilantro and parsley, chopped (you can use just one of those or both)
1/2 tbs salt
1/2 tbs turmeric
1/2 tbs cumin

Here is how:

Rinse and drain the lentils using a large strainer.
In a medium soup pot add the oil and sauté the onion for 1 minute. Add the sweet potato, and mix. Add the celery and garlic and mix for another 1-2 min. Lastly add the lentils and spices and mix. (Reel says 1/2 tsp of each but it’s actually 1/2 tbs of each spice)
Fill up the pot with water, up to 1.5” from the ledge of the pot. Mix everything to make sure nothing sticks to the bottom of the pan and bring the soup to a boil.
Taste the broth to make sure it’s salty enough. You might have to add more salt, add another 1 tsp and taste again.
When the soup is boiling, lower the heat and cover. Simmer covered for 30 min.
After 30 minutes, uncover and add the parsley / cilantro and cover for another 10 min.
process the soup with a hand held blender. Process until the soup is smooth and no big lamps shown.
Serve in a soup bowl and drizzle with lemon and 1 teaspoon of olive oil and enjoy!
Note: taste the broth throughout the process and adjust for taste as you go. If you like the flavors to be more intense, add more of the spices.

This soup will freeze well! Leave half to eat now and half to freeze and have ready for when you are short on time and want a home made soup.
