250g couscous

2 tbps olive oil

~1/4 cup lemon juice (this is really to taste)

1 half cucumber

2 tomatoes

1 red bell pepper

1 yellow bell pepper

1 half read onion

1/4 cup of raisins, soaked in hot water (the amount is really up to you)

1. Dice all the veggies and herbs very finely

2. Mix the veggies in with the uncooked couscous

3. Drizzle the mixture with the olive oil, lemon juice and salt and toss. Let it rest for 20 minutes. If the couscous still feels dry, add more olive oil or lemon juice (depending on how acidic you like it)

Best served chilled
