Lentil And Lemon Soup

400g potatoes diced
300g carrots diced
1 large onion finely diced
1/2 bunch of silverbeet or chard chopped in 1cm lengths
5 cloves of garlic minced
1 cup lentils
Juice of two lemons
1 vege stock cube
Fresh bay leaves
Plenty of EVOO
Salt
Heaped tsp 7 spice
Heaped tsp Cumin
Heaped tsp Paprika
Cracked pepper
Aleppo pepper

Start by sauteeing the onions in some EVOO, add the potatoes, carrots and lentils along with the salt, 7 spice, cumin and paprika.
Add 2litres of water, the stock cube and the bay leaves and cover and bring to the boil.
Simmer for 15 minutes and then add the Silverbeet/chard. In a small bowl add the garlic, lemon juice and 1/2 cup of EVOO combine well and add gradually to the soup tasting as you go.
Allow to simmer for a further 10minutes and serve with plenty of cracked pepper and Aleppo pepper.
