Potato Salad With Minty Dijon Mayo

Składniki

DRESSING

- 300ml mayonnaise

- 2 tbsp fresh chopped mint

- 2 tbsp Dion mustard

- Salt & ground black pepper to taste

FOR THE SALAD

- 750g baby potatoes

- 450g frozen peas, thawed

- 400g green beans, trimmed

- 2 large ripe avocadoes

- Juice of ½ a lemon

Wskazówki

Halve the baby potatoes and boil in salted water for 10 - 15 minute: or as per cooking instructions below. Cook until tender.

Mix all the dressing ingredients with a little salt & pepper and 2 tbsp of wate until well blended.

Steam the green beans until tender. Leave to cool. Place the potatoes in a bowl and add the cooked beans an thawed peas.

Just before serving, peel, stone and chop the avocados and toss in lemon juice to prevent browning. Pile on top of the salad and drizzle over the dressing. Mix in the dressin into the potatoes and serve.
