Frozen Cheesy Buffalo Chicken Burritos

Buffalo Chicken:

1360g (48oz) boneless, skinless chicken thighs

1 tsp salt

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tsp chili powder

1 packet ranch seasoning

1 Tbsp fresh chopped dill

100g (½ cup) buffalo sauce

Buffalo Cheese Sauce:

750g (3 ¼ cups) 2% cottage cheese

200g (¾ cup) 1/3-fat cream cheese

200g (¾ cup) buffalo sauce

200g (1 ½ cups) 2% cheddar cheese

60g (3 Tbsp) honey

30g (2 Tbsp) butter

Handful of chopped chives

14 large tortillas

Instructies

1. Add chicken thighs to your slow cooker. Sprinkle with salt, garlic powder, onion powder, paprika, chili powder, ranch seasoning, and fresh chopped dill. Pour in buffalo sauce and mix well to evenly coat the chicken. Cover and cook on high for 2-3 hours or low for 3-4 hours, until the chicken is tender and easily shredded.

2. Once the chicken is cooked, shred it directly in the slow cooker using two forks. Blend 2% cottage cheese and shred the 2% cheddar cheese. Mix into the slow cooker along with 1/3 fat cream cheese, honey, additional buffalo sauce, butter. Stir thoroughly until the mixture is smooth and creamy. Fold in chopped chives for added flavor. Add a corn starch slurry to help thicken further (2 Tbsp corn starch mixed with 2 Tbsp cold water)

3. Transfer the chicken mixture to the refrigerator and let it chill for 45 minutes to an hour to thicken. Lay out 14 burrito-sized tortillas and evenly divide the chicken mixture into the tortillas. Roll each tortilla tightly to form burritos. Wrap burritos in aluminum foil and store leftover burritos in the freezer for meal prep.
