Turkey Meatball Soup

Ingrediënten

2-3 Pounds Ground Turkey

1 Large Egg

2 Tbsp White Wine or Water

1/4 Cup Panko Bread Crumbs

1/3 Cup Grated Parmesean Cheese

3 Tbsp Mineced Parsley

2 Cloves Minced Garlic

1 Tsp Salt

1/2 Tsp Pepper

Broth:

8-10 Cups Chicken Stock

1-1/2 Cups Chopped Carrots

3/4 Cup Orzo

4 Cups Chopped Kale or Escarole

Instructies

Whisk eggs with water or wine. Add bread crumb and let it sit 5 minutes.

Add remaining meatball ingredients and mix well.

With wet hands, form medium-sized meatballs and place on a tray. Refrigerate for 30 minutes.

Boil and cook ozro seperately.

Bring the chicken stock to a boil. Add carrots and ozro. Simmer for 8 minutes.

Add turkey meatballs and simmer for 10 minutes. Stir in chopped kale or escarole and simmer for another 5-10 minutes longer. Adjust season with salt & pepper. Serve!
