Oven Baked Sausage Casserole

Ingrediënten

700g / 1.4 lb baby potatoes, halved

3 carrots, peeled and cut into 2"/5cm pieces

2 red onions, each cut into 8 wedges

2 garlic cloves, minced

2 tbsp olive oil

2 tsp dried thyme

1 tsp dried oregano

Salt and pepper to taste

8 - 10 sausages (500-700g / 1-1.4lb)

Oil spray (optional)

2 tbsp / 30g melted unsalted butter

2 1/2 tbsp plain / all-purpose flour

2 cups / 500 ml beef or chicken broth

Fresh thyme for garnish (optional)

Instructies

Preheat oven to 200C/390F (standard) or 180C/350F (fan/convection). 2. Place the vegetable ingredients in a large bowl and toss well to coat with olive oil, thyme, oregano, salt, and pepper. 3. Add the sausages to the bowl and toss briefly to mix. 4. Transfer the mixture into a roasting pan, ensuring the vegetables are stacked about 2 deep. 5. Rearrange sausages on top of the vegetables. 6. In a separate bowl, melt the butter and stir in the flour to create a roux. Cook for 1-2 minutes. 7. Gradually whisk in the broth, cooking until thickened. 8. Pour the gravy over the sausages and vegetables in the roasting pan. 9. Bake in the preheated oven for approximately 30-40 minutes or until the sausages are cooked through and the vegetables are tender. 10. Garnish with fresh thyme if desired and serve hot.
