• 8 slices crustless white bread.
• 2 tbsp strawberry jelly jam.
• 4 eggs.
• 2 medium-sized potatoes.
• 100g surimi (imitation crab sticks).
• 1 small carrot (diced or finely chopped).
• 1/2 cucumber (diced or finely chopped).
• 1/4 small cabbage (finely shredded).
• 4-5 tbsp Kewpie mayonnaise.
• 1 tsp vinegar.
• Salt and black pepper (to taste).
Instructies
First Layer:
1. Boil the eggs in a saucepan of slightly salted and vinegar-infused water for about 10 minutes, until hard-boiled.
2. Boil the potatoes in a separate saucepan of slightly salted and vinegar-infused water for 15-20 minutes, or until tender.
3. Slice the surimi into thin strips.
4. Once the eggs and potatoes have cooled, peel the eggs and mash both the eggs and the potatoes in a bowl until smooth.
5. In a mixing bowl, combine the mashed eggs, mashed potatoes, and surimi. Add 2-3 tbsp of mayonnaise to bind the mixture together. Season with salt and black pepper to taste.
Second Layer:
1. Dice the carrot and cucumber into small pieces, removing excess moisture from the cucumber.
2. Finely shred the cabbage.
3. Mix the diced carrots, cucumber, and shredded cabbage with 2-3 tbsp of mayonnaise.
Assembly of the Sandwich:
1. Take a slice of bread and spread the first layer (egg, potato, and surimi mixture) evenly.
2. Add another slice of bread and spread 1 tbsp of strawberry jam on top.
3. Add a final slice of bread and spread the second layer (carrot, cucumber, and cabbage mixture) evenly.
4. Top with the last slice of bread to complete the sandwich.
5. Wrap the sandwich in plastic wrap and slice diagonally from corner to corner to create two triangular sandwiches.
