Greek Chicken Souvlaki Bowls with Spicy Garlic Sauce

For the Chicken Souvlaki

1½ lbs (680g) boneless, skinless chicken breasts or thighs, cut into chunks

3 tablespoons olive oil

3 cloves garlic, minced

Zest and juice of 1 lemon

1½ teaspoons dried oregano

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

Wooden or metal skewers

For the Spicy Garlic Sauce

½ cup Greek yogurt

¼ cup mayonnaise

3 cloves garlic, finely grated

1–2 tablespoons hot sauce (adjust to taste)

1 tablespoon lemon juice

1 tablespoon olive oil

¼ teaspoon salt

For the Bowl Base

1½ cups cooked rice or quinoa

1 cup chopped romaine lettuce

½ cup cherry tomatoes, halved

½ cup diced cucumber

¼ small red onion, thinly sliced

¼ cup kalamata olives (optional)

Fresh parsley or dill for garnish

Instructies

Step 1: Marinate the Chicken

In a bowl, whisk together olive oil, garlic, lemon zest, lemon juice, oregano, paprika, salt, and black pepper.

Add chicken pieces and toss to coat well. Cover and marinate for at least 30 minutes (or up to 4 hours for deeper flavor).

Step 2: Cook the Souvlaki

Thread marinated chicken onto skewers.

Grill over medium-high heat for 8–10 minutes, turning occasionally, until fully cooked and slightly charred (internal temperature 165°F / 74°C).

Remove from grill and let rest for 5 minutes before removing from skewers.

Step 3: Prepare the Spicy Garlic Sauce

In a small bowl, combine Greek yogurt, mayonnaise, grated garlic, hot sauce, lemon juice, olive oil, and salt.

Whisk until smooth and creamy. Adjust spice level if desired.

Step 4: Assemble the Bowls

Divide cooked rice or quinoa among serving bowls.

Top with grilled chicken souvlaki, romaine, cherry tomatoes, cucumber, red onion, and olives.

Drizzle generously with spicy garlic sauce and garnish with fresh parsley or dill.

Serve immediately while warm and fresh.
