Honey Mustard Chicken Cobb Salad

¼ cup olive oil*

¼ cup honey

¼ cup smooth dijon mustard**

2 Tbsp apple cider vinegar

⅛ tsp salt

Cracked black pepepr, to taste

1 lb. chicken tenders

6-8 cups romaine or green leaf lettuce, chopped

6-8 slices of bacon, cooked & chopped or cumbled

4 hard boiled eggs, peeled & sliced

¾ cup cherry tomatoes, sliced

1-2 avocados, diced

¼-½ cup feta cheese, crumbled

Instructies

Make the dressing/marinade. Whisk the olive oil, honey, dijon mustard, apple cider vinegar and salt together until smooth. Season with cracked black pepper to taste then cover and set it aside.

Marinate the chicken. Place the chicken tenders in a plastic bag or bowl and toss them in a ¼ cup of the dressing. Let the chicken marinate for 30 minutes - 2 hours, if desired.

Bake. Once the chicken is done marinating, preheat the oven to 400 degrees and spray a baking dish with cooking spray.Add the chicken to the dish and season with salt, black pepper and paprika. Place the dish in the oven and bake for 15-20 minutes (or until the chicken reaches an internal temperature of 165 degrees). Let them cool completely before cutting into bite sized pieces.

Assemble the salad. Add the lettuce, diced chicken, hard boiled eggs, tomatoes and bacon to a large bowl and toss in your desired amount of dressing.

Serve! Sprinkle feta cheese over the top and serve immediately.
