Homemade Quick Pickled Vegetables

Pickling brine
3 cups water
2 cups vinegar (white vinegar or apple cider vinegar)
3 tbsp sweetener of choice - sugar, sweetener, liquid monk fruit, or maple syrup
2 tsp sea salt
1-2 tablespoon of pickling spice (Recipe Below)
Vegetables:
cucumbers, cut lengthwise
red onion, thinly sliced
carrots, sliced in segments
garlic cloves
jalapeños, thinly siced
cauliflower florets, chopped small
Instructies
In a pot over medium heat. Add the water, vinegar, sweetener. Bring to a boil, then remove from the heat.
Place the veggies in the clean jars along with the pickling spice. Carefully pour the vinegar mixture over the veggies, filling the jars.
Let the jars come to room temperature, then seal them shut and store in the fridge. Let them marinate for at 48 hours. Devour!
Will stay fresh in the fridge for 3 weeks
Homemade Pickling Spice Recipe
Place all ingredients in a jar or airtight container and mix until all ingredients are combined.
3 Tbsp. Mustard seed
2 Tbsp. Bay leaves
3 tbsp. Whole peppercorn
1 Tbsp. Allspice
1 Tbsp. Coriander seed
1 Tbsp. Juniper berries
2 tsp. Chili flakes
