Hearty Lentil Soup

1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
1 tsp ground cumin
1 tsp smoked paprika
½ tsp turmeric (optional, anti-inflammatory)
1 cup dry green or brown lentils, rinsed
1 can (400 g) diced tomatoes
4 cups vegetable broth (or water + 1 stock cube)
1–2 cups chopped spinach or kale (added at the end)
Juice of ½ lemon
Salt and pepper to taste
Optional for extra protein: ½ cup cooked quinoa or ½ cup edamame added before serving
Instructies
Heat olive oil in a large pot.
Add onion, garlic, carrot, and celery; sauté 5–7 min until softened.
Add cumin, paprika, and turmeric; cook 1 min until fragrant.
Stir in lentils, tomatoes, and broth. Bring to a boil, then reduce to low and simmer 25–30 min until lentils are tender.
Stir in spinach/kale and lemon juice in the last 2–3 min.
Season to taste. Serve warm, with the salad on the side.
Notities
🌈 Flavor Variations
Spicy Moroccan: Add ½ tsp chili + 1 tsp coriander + garnish with fresh mint.
Creamy Coconut Lentil: Replace 1 cup broth with light coconut milk.
Mediterranean: Add diced zucchini, roasted capsicum, and oregano.
Protein Boost: Stir in ½ cup Greek yoghurt or a scoop of unflavored protein powder (just before serving).
