Healthy Tuscan Bean Stew

Ingredients (Serves 6)

1 tbsp olive oil

1 onion, finely chopped

2 carrots, diced

2 celery sticks, diced

3 garlic cloves, finely chopped

1 tsp each oregano, thyme & smoked paprika

Pinch chilli flakes

2 tbsp tomato purée

2 x 400g tins chopped tomatoes

30g nutritional yeast

1L veg stock

2 x 400g tins borlotti beans, drained

2 x 400g tins butter beans, drained

100g cavolo nero or kale, torn

Juice ½ lemon

Handful parsley, chopped

Olive oil + crusty bread to serve

How to make it

Instructies

Make the base: Heat olive oil in a large pan. Add onion, carrot & celery, cook 10 mins till softened.

Build the flavour: Add garlic, oregano, thyme, paprika & chilli flakes. Fry 1 min. Stir in tomato purée, fry 2 mins. Add chopped tomatoes, nooch, and veg stock. Stir through both beans. Season and simmer 15 mins, adding cavolo nero for the last few minutes.

Finish & serve: Stir in lemon juice, ladle into bowls, drizzle with olive oil, top with parsley, and serve with crusty bread for dunking
