Savoury Oats with Eggs

½ cup rolled oats (or steel-cut oats for slower digestion)

1 cup unsweetened soy milk or low-sodium vegetable broth

1 tsp olive oil or ghee

Salt and black pepper to taste

Add-ins:

1–2 eggs (poached, soft-boiled, or scrambled — your choice)

½ cup spinach or kale, chopped

¼ cup cherry tomatoes, halved

2 tbsp grated parmesan or crumbled feta (optional but adds protein + calcium)

½ tsp chilli flakes or smoked paprika (optional for flavor)

Optional extras: mushrooms, zucchini, or bell peppers

Toppings (optional but great):

1 tsp chia or hemp seeds

Drizzle of olive oil or hot sauce

Fresh herbs like parsley or chives

Instructies

In a small pot, heat olive oil over medium heat. Add oats and lightly toast for 1–2 minutes (this gives them a nutty flavor).

Add soy milk or broth, bring to a simmer, and cook 5–7 minutes until creamy.

Stir in spinach, tomatoes, and any optional veggies. Cook another 1–2 minutes until wilted and tender.

Season with salt, pepper, and a pinch of paprika or chilli flakes.

While oats are simmering, poach or fry your eggs to your liking.

For a one-pan option, crack the eggs directly into the oats and cover for 3–4 minutes until set (like a savory porridge shakshuka).

Pour oats into a bowl, top with eggs and cheese.

Sprinkle seeds or herbs, drizzle olive oil, and enjoy warm.
