Sweet Shortcrust Pastry

1-3/4 c flour
1/2 c sugar
1/2 tsp salt
1/2 c butter
2 eggs, slightly beaten
1 tsp grated lemon peel OR 1/8 tsp vanilla
Instructies
Combine flour, sugar, salt.
Make a well in center and work in butter. Add eggs and lemon peel or vanilla. Blend until nice ball is formed.
Press into bottom and side of pan. Refrigerate 30 minutes and roll.
Bake at 450° 10-12 minutes til golden brown, or bake tarts at 375° for 15-20 minutes.
Notities
You can also add cocoa powder, ground almonds or hazelnuts can be added. Prepare quickly so it won't crumble when rolled out.
