Chocolate (or Vanilla) Pudding from Mom's Shaker cookbook

4 c. milk

1 square semi-sweet chocolate

6 Tbsp. sugar

1 Tbsp. hot water

4 Tbsp. cornstarch

4 eggs, separated

1/4 tsp. salt

2 tsp. vanilla or rose water

Instructies

Put milk onto simmer, reserving 1 cup to mix with cornstarch, later.

Scrape chocolate and add 2 Tbsp. sugar and 1 Tbsp. of hot water to it. Place over a hot fire and stir until dissolved (about 1 minute). Put this in the simmering milk.

Beat egg whites to a stiff froth and set aside.

Mix cornstarch with reserved cup of milk. Beat yolks of eggs into this mixture and when milk is boiling, stir this mixture, the remaining sugar, and salt into it. Cook 6 minutes, stirring all the time.

Add beaten egg whites. Remove from the fire and add vanilla or rose water. Can be eaten cold or hot, with or without sugar and cream.

Notities

(Note: for vanilla pudding, leave out chocolate and 2 Tbsp. sugar and hot water. Very delicious)
