Lentil Soup (Hispanic)

Olive Oil

1 Large Onion

4 Garlic Teeth

Sweet Potato in cubes (small, so that they cook well). Regular potatoes or carrots also work

Sweet Paprika (1 teaspoon)

Cumin

Black Pepper

1 pack of lentils

3-4 tbsp Tomato Pure and/or Tomate Natural

1 Liter vegetable broth

Large Bay Leaf

1 Chorizo (optional)

Splash of vinegar

1 tsp of sugar (optional)

Salt

Instructies

-In a pan, put the olive oil and fry potato, onions, carrots (if included) and garlic. Add paprika, cumin, and pepper.

-Wash lentils while frying ingredients

-When everything is fried, add the lentils and stir fry for 2 min.

-Then add the broth, tomato, and bay leaf

-Close the lid and cook at medium low heat for ~25 minutes checking that you have enough broth. If not enough broth, then add water.

-Stir occasionally. Add vinegar and sugar (if included).

-Cook till the lentils are soft. Add salt to taste
